James,

In our environment we have a mixed mail system too (Linux and Exchange). On
the exchange server, System Manager, Administrative groups, %group%,
servers, %servername%, protocols, SMTP, Default SMTP Virtual server
(properties), select "messages" tab. In the field that says "forward all
mail with unresovled recipients to host:" I put the IPaddress of the linux
mailserver.

If someone mails joe@cs and joe has exchange, he get's his mail. If he
doesn't have exchange, mail get's forwarded to linux, and then delivered to
Joe.
