I haven't used McAfee in ages due to all of the problems that they had with Exchange back in the good ole' days of Exchange 5.0. I assume that there is a way to exclude all of the Exchange directories from the file-level scanning engine and that you've already done so?

Exchange has never tolerated having files unavailable when it wants them....shutting down the AV software for a couple days would certainly answer the question for you if this is a frequent problem.
