Why would you want to do this ? You can use Exchange 2000 in a Windows 2003 forest so long as you are running Exchange 2000 SP2 or SP3. If you do some research on Windows 2003 you will find that the entire structure of IIS (which exchange depends for most everything) has been completely re-worked, and although it has an IIS 5 compatiblity mode it is not fully compatiable with IIS5. It seems to me that although you can probably jump through some hoops to make it work, it would not really provide any tangable benefit.
