When it does the maintanance it basically defrags the database.  If the
process takes longer then one hour it stops and the day after continues
from where it left.

To manually defrag the dataabse use the ESEUTIL.  It can be found in
...../exchsrvr/bin/eseutil.exe
Just type it and you get the help.

I realize Exchange performs its own maintenance
nightly, or whichever schedule you place it on.

First:  What exactly does this do?

Second: How do you defrag your databases?
        Is this done automatically?
