If by disable you mean the entire account, you can do that thru ADUC (dsa.msc) and choose 'disable account' after right-clicking the user object. If you mean you want to remove their mailboxes, then do the same thing but instead select the 'exchange tasks' and 'delete mailbox' in the resulting wizard.
