Chris, If that was the first DC and you remove that make sure all your FSMO roles are moved over the new DC. Secondly verify that the Exchange RUS service points to the new DC. Try this, Without shutting down the server completely, just stop all Exchange services only. Are the users able to access the email ? The new box serves as DC and Exchange server and meant to be a stand alone mail server. I have turned GC on and off in my various attempts at full success. When I turn off the first box folks get a network error that they can't find the mail server. All clients are pointed to the new server and their mail resides on that server.
