[ExchangeList] Auditing user's folder

I posted this a couple of weeks ago, and did not get a response, so I
figured I would try again...
 
Does anyone know of a way to check to see if someone has accessed or
"read" emails within a certain folder.  We have a SPAM filter (GFI Mail
Essentials) that puts tagged SPAM emails into the user's "junk email"
folder.  Management would like to know if there is a way we can see if
people are checking that folder (and reading emails if possible).  I
know there is logging for the exchange server, but I do not know of a
way to see if someone gets into their own junk email folder.  Any input
would be greatly appreciated.

Exchange 2003
Outlook 2003
