That would suffice?  That's a rare luxury.  Most of the users I've ever seen
have had a tendency to delete things, archive them, use PST etc.  
If a copy of the entire mailbox would do it, Exmerge would probably work
just fine.  Tracking logs would also be useful if you have them far enough
back (again, quite a luxury that would be).

I need to go back and track any and all activity for this user. This would
any emails that have been sent, replied to, and mailed. So a copy of all
mail in the users sent items and inbox would suffice, along with any logs.

More information is needed.  What were you doing with 5.5 that you want to
do with 200x ??  
 
Do you want information about the amount of messages in the mailboxes?  Do
you want a copy of each?  Do you want the logs?  ????

Can mailbox manager still be used to obtain a copy of a users email in
exchange 2000? I want to obtain a history of all email ever sent, replied
to, or received by a single user. I know you could do something like this in
5.5 but I'm not sure about 2000.
