[duxuser] Languages

I'm just double checking on this.
If I've set the language under Document > Translation Code, this sets the
language for the documents I create until I go in and change it?
If, within a document, I need to change the language to French, for
example, would I put my cursor at the start of the French text and use the
[lang-FR] code? If so, how to I turn this off and return to the original
document language again?
I got confused reading the help files.
Also, does anyone know where I can find the Maori Braille Table?
