This is true, but for recording purposes, the mixture of pickup/acoustic makes the difference. The pickup has the impedence to gather the good pitches and attacks/decays and the acoustic has the benefit of gathering white noise (fret noise, string winding noise, fingering, etc.). In my humble opinion, both need to be used for a nice, organic sound. This has to be done with care and don't hesitate to consult a professional audio technician, especially if you plan on taking your show on the road. Nothing is more frustrating to an audience than a recorded sound that is vastly different than what is on the studio-produced album. And, don't ever produce your album with headphones only. Use your ears and a proper room. Many better electronics packages for amplifying an acoustic are just that, a combination of piezo transducer and microphone inside the instrument. But, it comes down to just using your ears. Which do you like the sound of more? To me, the saddle transducers sound harsh, thin, and unrealistic compared to yes, what the guitar actually sounds like to your ears. but that's just one guy's opinion.
