I am about to create a new Test document. I'm not quite sure what the difference is between colour and object/text level, and what effects these settings have.

I believe it works in layers, at the bottom is the colour definition of overprint and on top of it is the object layer. However higher levels can't turn off overprint.

If a colour is set to overprint then it overprints where ever it is used, even if the object overprint setting is off.

Colour definition is global - as described above.

The only explanation why changing the setting for one frame might affect another I can think of, is that both frames were selected at the time.

I'm sure I didn't have two frames selected simultaneously. But at the time I didn't appreciate that colour definition is global, so what may have happened is that I reset the colour definition as well as the object definition when each frame was selected when I was trying to set opposite overprint states ... if that makes sense.
