Fang's cr.HP is special cancellable. You could cancel into his LP
projectile (the vertical one) or the HK bomb/poison cloud (whatever the
hell it's called) (charge back, forward+HK). Just as a general rule of
thumb, ALWAYS plant the bomb/poison cloud when you have some space between
yourself and the opponent. People can't just randomly dash in or jump when
it's out and it helps a lot with Fang's zoning game. Don't forget about
your command dashes either.
