My issue is that I ran around for an hour, killing guys and didn't get
anywhere. Running back to the previous bonfire will just reset all enemies.
Then I can just go for another hour doing the same? I think I need a map.

Make peace with the idea early
Its not a problem, you cant run out of souls.
If it any point you feel that the amount of souls you are carrying around are
of a significant value for your level then just run back to a previous bonfire.

Dark Souls is irritating me.
I just ran around for nearly an hour killing guys. Racked up 6k souls, which
for a lv8 guy isn't bad.
In the end just run out of festus potions and die. Open world is fine, but when
you have zero idea of where you're going it just means randomly killing guys
until you die. No point in it.

Unfortunately those big bonuses come from using duty roulette which must be
solo'd. I guess its one way to assist the newer players - there are 4
categories for roulette so you not limited to low levels... it says the bonus
is only awarded once per day... but i got a bonus for ifrit and halatali so im
not sure...

Wow dungeons are actually worth doing now! Using duty roulette i obtain 95 000+
exp for doinv Ifrit normal mode... because i was a healer in need got a bonus
of 5k. Did halatali through roulette (enemies give decent exp) and was awarded
a bonus of 110 000 exp +1350 gil and 300 seals plus got 4k exp and 300 gil
bonus for being a healer in need and 6500 for killing final boss. I was half
way to level 36 and levelled up in halatali which is a level 20 dungeon.
