If you hit certain enemies or bosses enough or in the right spots you can
"stagger" them.
This usually allows them to be riposted (Similar to what you can do after a
parry)... usually you can riposte them in the head.
However if they have been staggered and you dont do a riposte then your attacks
do some extra damage and you get a different sound effect when hitting enemies.

Thats counter hit damage.
It happens when you keep on hitting an enemy that has gone into a "ripostable"
stance.
Like when you get the crumple stun on a guy but just keep swinging instead of
taking the riposte.
