I'd strongly recommend the Chicago Art Institute. Bring some Crayons / colored pencils and let your budding artist go to work on a bench offering their interpretations of Monet's Waterlilies or designs by Frank Lloyd Wright. Very cool museum with a great cafe in the basement.
