Declan and Moritz,
You don’t need a flight plan at all. FSX Pilot can actually fly you pretty much
anywhere, and includes commands to try to land in weird terrain, which might
help in really remote airports. It can also fly you via airways, which is
helpful if you’re flying with ATC coverage or with a flight plan you create
yourself.
One thing which is important to emphasize is that just because FSX Pilot
doesn’t integrate support for ATC, that doesn’t mean you can’t use them
together. You can certainly fly with default ATC, or any of the third-party
add-ons.

Also, since I’m trying to gravitate away from IYP, it’s also useful in
that regard. I want to fly more aircraft, and the fact that IYP won’t
ever be updated with more supported aircraft… reason enough right there
to stop, or at least attempt, to stop using it.
