To change the sim rate, press the R key, followed by the minus and/or plus
key. Rates are:
1/4, 1/2, 1:1,2,4,8,16,32,64,128
IYP will become unstable at 8X, fish tail at 16X, and crash above 16.

Al,
You actually have to click the menu first, and then move to find and click
the option you want within each lower menu. So navigate to Options, click,
then find Simulation Rate and click, or Settings and click, or whatever.
