Weight Watchers Texas Style Egg Skillet

Cook Time: 15 min 

3 oz thickly sliced turkey bacon, chopped 
1 medium baking potato, diced 
8 large eggs, beaten 
1/2 cup chunky salsa or pico de gallo 
1/2 cup shredded low-fat Cheddar cheese, smoked-variety 

Cook bacon in a large nonstick skillet over medium heat until edges begin to 
brown; pour off drippings. Add potato; cook, stirring, until potato is tender
and browned, and bacon is crisp, about 6 to 8 minutes.

Add eggs to skillet. As eggs begin to set, use a spatula to gently pull the 
eggs across the pan, forming large soft curds until thickened and no visible
liquid egg remains.

Stir in salsa or pico de gallo and heat through; sprinkle with cheese. Yields 6 
servings.

Serve eggs in whole-wheat tortillas, if desired (will affect POINTS values)..
