Lemon-Tarragon Salmon Steaks

(Serves 2)

 

The charm of this recipe lies in the use of fresh tarragon which lends a 
wonderful flavor. If you cannot find fresh, substitute half a teaspoon of dried

tarragon.

. 1 tablespoon olive oil 

. 1 small garlic clove, minced 

. 1 teaspoon fresh tarragon, roughly chopped 

. 2 tablespoons fresh lemon juice 

. Salt and pepper to taste 

. 2 6-ounce salmon steaks 

. Fresh tarragon for garnish

1. Preheat the oven to 400° F. 

 

2. Mix the oil, garlic, tarragon, lemon juice, salt, and pepper in a small bowl 
until thoroughly combined. 

 

3. Spread this mixture evenly over the top of the salmon steaks. Use your 
fingers to massage it into the fish. 

 

4. Place the salmon steaks on a foil-lined baking sheet. 

 

5. Roast salmon for 10-12 minutes or until it is cooked through. 

 

6. Serve at once, garnished with a sprig of fresh tarragon.
