I got this recipe from my mother, who got it from my cousin Janice.

Sweetheart Salad
In a pan combine two cups of crushed pineapple with juice or undrained, with
1/2 cup of sugar. Bring this to a boil. Meanwhile, in a bowl dissolve 1 1/2
tbsps (which is equal to 1 1/2 envelopes) of plain Knox gelatin in 1/4 cup
of water. Pour the gelatin mixture into the pineapple mixture. Add two tbsps
of lemon juice and two tbsps (or more to taste) of maraschino cherry juice
to the pineapple/ gelatin mixture. Add two 3oz or 1 8oz package(s) of
softened
Philadelphia cream cheese to the mixture; combine thoroughly. Be sure to put
the cheese in while the pineapple is still hot. Add twelve (or more to
taste) chopped maraschino cherries to the mixture; combine thoroughly and
chill. When the mixture begins to set, fold in two cups of whipping cream or
one package of
whipped Dream-Whip. Serves four to six.
This is a really pretty salad, perfect for Valentine's Day or another
special occasion. It is good served as a fruit salad with a meal or as a
dessert.
I have also sprinkled it with flaked coconut, which is a delicious touch as
well.
