Stuffed Zucchini
Serves 4
Ingredients:
2 lbs.(pounds) zucchini (about 4)
2/3 cup beef broth
2 cloves garlic (minced)
2 Tbsp(Tablespoon) fresh basil (or 1 tsp(teaspoon) dried)
1/2 lb.(pound) ground beef (85%)
Sugar’s note: meat is optional)
2 tsp(teaspoon) cornstarch
1 medium sized tomato (coarsely chopped)
1/3 cup mozzarella cheese (part skim milk)
Directions:
1. Cut 1) Halve zucchini lengthwise.
2. ) In a large skillet bring 1/3 broth, garlic, basil
and pepper to a boil over medium high heat.
3. ) Add zucchini halves, skin side up. Cook for 5 minutes.
Remove the zucchini.
4.) Cool and scoop out and chop the zucchini flesh.
Sugar’s note: I use a spoon for this
5. ) In a small bowl combine reserved 1/3 cup of broth with cornstarch.
6. ) Brown and crumble beef in skillet. Add zucchini and cornstarch mixture.
Cook until thickened, then add tomatoes to beef mixture.
7. ) Place zucchini halves on foil-lined baking sheet.
Fill with zucchini mixture and sprinkle with mozzarella cheese.
8. ) Broil until the cheese is melted (2-3 minutes).
