Hi list.I just wanted to share a little bit about but I have been cooking
recently since my last post. This morning, I got up early, and chose to stay up
so that I could have a little quiet time before kids and family started making
demands. I am trying out a new recipe, for me, for turkey meatballs simmered in
a rich tomato sauce, in the slow cooker. This, of course, will be served over
pasta for dinner, and be accompanied by a salad and some garlic bread. The
meatballs not only contain turkey, but also plenty of onion, garlic, and
chopped sun-dried tomatoes. The onions and garlic are cooked in a little bit of
the packing oil from the sun-dried tomatoes. There is also parmesan cheese in
the mix. I have already made the meat mixture, and it is firming up in the
refrigerator at the moment. I'm supposed to bake these meatballs in the oven on
high on a wire rack until they are just set and some of the fat renders. This
will help them hold together during the slow cooking process. I am anxious to
see how these meatballs turn out.I also had a lot of fun oh, this past Sunday,
Grill roasting a couple of whole chickens. I posted to a couple of cooking
interest groups last week, asking for help on how to make the skin on my
chicken crispy, as this has been a problem for me in the past. The number one
tip I received was to use baking powder as part of the seasoning for the
outside of the birds. I did this, as well as let them air-dry in the
refrigerator overnight. Then I roasted them at 450° until they were done. While
the chicken rested, I went ahead and baked some awesome cream biscuits in one
of my cast iron skillets on that same hot real. Everything turned out
flawlessly, and I finally got the crispy skin I wanted. I would rank it as one
of the best meals I have ever made. Getting back to the turkey meatballs, this
is a very Hands-On and time intensive dish to make, but once I hit that start
button on the slow cooker, I won't have anything to worry about for about 6
hours. I'm generally trying to avoid recipes that require a great deal of time,
but this one sounded so good that I couldn't turn it down. I'll let you all
