Personally, there's no way I would throw it away. I can't imagine what could be in the mix that would make it perishable. Perhaps the expiration date is there because the baking soda or powder in the mix is only at its best for so long. I'd simply add a small amount of soda or powder to the mix and bake it up as usual.
