Personally, there's no way I would throw it away. I can't imagine what could be in the mix that would make it perishable. Perhaps the expiration date is there because the baking soda or powder in the mix is only at its best for so long. I'd simply add a small amount of soda or powder to the mix and bake it up as usual. I do not yet have a tried and true gazpacho soup that is good enough to end up in my permanent recipe collection. I have two recipes from my Professional Cooking book; one is where almost all the vegetables are grilled, and one that is very traditional. I also have a simpler recipe that I think uses V8 juice and a handful of other convenience foods to make something called gazpacho. Let me know if you're interested in any of these recipes, and I'll make the time to type them out and post them here. I dare say the baby is gradually starting to eat and sleep in a somewhat predictable pattern now, so just maybe I can actually plan a time to type these out. And before you object, believe me when I tell you a distraction and a project like that are just what I need. Again, let me know which recipes you're interested in. Jon

Please send us a good gazpacho recipe. I had one but it got delted when my
computer screwed up.  I really like gazpacho.
I too like a thick soup, especially my potato soup which I make with cheese.
Thin watery soup isn't my thing either.

I know tastes vary widely from person to person, but to me, that sounds
like one very strange bowl of soup.  Sort of a salmon chowder with rice
replacing the potatoes and broccoli added in.  I'm glad you enjoyed it,
though. I like my soup to be on the chunky side and for the broth to have at least some body to it, but I wouldn't say I'd intentionally make a soup thick enough to eat with a fork. That sounds more like a casserole than a soup or stew. But I'm with you in that thin, watery soups are not my thing as a general rule. Out here, it's already too hot to enjoy any soup except

one served cold. If we manage to get that bumper crop of fresh tomatoes,
perhaps I'll try making gazpacho.   Jon

I like thick soup. I like to be able to chew my soup, and if I can't
eat it with a fork, well, it comes pretty close.
The other day, my friend Linda Wright made a package of cheese broccoli
soup which she had gotten in a strange way. John's wife, Bethany, noting
that the date was expired on these 3 packages of this stuff, threw them
away. I think they are a shelf product, not a freezer one. Anyhow, her
husband John, Linda's younger brother, went out to the trash and
surreptitiously rescued them and gave them to his next door neighbor, his
sister Linda.
Linda made one package and split it among her friends. I got a grand bowl

of it; Already Linda had added rice to it. Well, that wasn't think enough

for me; so I added corn. That was delicious. I still had some, so this
morning I added both corn and a salmon burger, cut into small bits.  I
microwaved that. I can't tell you how delicious it was. What a blend of
flavors.  Of course, they may have to call out the ambulance...
