Pineapple Salsa

By Hector Rodriguez

Pineapple salsa pairs well with roasted pork (pernil), ham, and other pork
dishes. There are no chili peppers in this recipe.
Prep Time: 15 minutes Total Time: 15 minutes Yield: 2 cups
Ingredients:

2 cups pineapple (chopped, fresh or canned)
    3 tablespoons cilantro (chopped)
2 teaspoons lime juice (fresh or bottled)
    1/4 teaspoon cumin (ground)
    1/8 teaspoon white pepper (ground)

Preparation:
In a bowl, toss all ingredients together. Cover and refrigerate until ready
to serve. The longer the salsa sits, the better the flavors blend together.
