Paradise Cafés Cappuccino Sandwich Cookies
for the cookies:
1 cup butter, unsalted, room temperature soft
1/2 cup sugar
1 tsp vanilla
2 cups flour
1/2 tsp. cinnamon
1/2 cup cocoa, unsweetened
sugar for sprinkling
Cream butter, sugar, and vanilla until light and fluffy.
Mix dry ingredients together in a seperate bow, then stir into the butter
mixture. Mix in thoroughly. Dough will be quite stiff, as it is more of a
shortbread than a sweet cookie.
Form into balls of about 1-2 tbsp of dough. Place on parchment paper lined
baking sheet. Press cookies to about 1/4 inch thick with the bottom of a
glass dipped in sugar. This cookie holds a pressed design very well, if you
have a ceramic cookie stamp. Sprinkle cookies with a little sugar before
baking.
Bake at 325-350 for about 8 minutes (this varies depending on oven) or
until cookies feel like they're starting to set in the middle. These are
somewhat tricky to time, since they're so dark in color. You don't have the
benefit of seeing a golden brown edge develop, so a bit of trial and error
may be part of it. You don't want them to be doughy, but you also don't
want them too crispy and dry.
Allow cookies to cool completely before putting together with the frosting.
Mocha frosting:
1/2 cup butter, unsalted
4 cup powdered sugar
1 tsp vanilla
2-3 tbsp strong brewed coffee or espresso, cooled
1-2 tbsp milk or cream, optional, if needed for correct consistency
Cream together buttter, powdered sugar, and vanilla using a hand held mixer
or stand mixer
If icing is too stiff, beat in either more coffee or some milk or cream to
make a smooth, spreadable consistency
Sandwich cookies with the frosting and prepare to be worshipped. Cookies
are for adults because of high caffeine content.
