MONKEY BREAD MUFFINS
1/4 cup sugar
1 1/2 tsp ground cinnamon
1 can Pillsbury biscuits
1/4 cup unsalted butter
2/3 cup brown sugar
2 tsp water
1/2 tsp vanilla extract
4 oz cream cheese
1 cup powdered sugar
1/2 tsp vanilla extract
3 tbsp. milk
*Recipe makes about 8 muffins, I always double the recipe so we have leftovers
Preheat oven to 375F and spray or line a muffin pan.
In a small bowl, combine the sugar and cinnamon.
Separate biscuits into 8 biscuits, and cut each biscuit into 9 pieces.
Roll biscuit pieces through the cinnamon/sugar mixture, coating evenly.
Place 8-9 pieces into each muffin cup.
In a saucepan, heat the brown sugar, butter, and water over medium heat until
boiling.
Cook and stir frequently until brown sugar is dissolved completely, about 2
minutes.
Remove from heat and stir in the vanilla extract.
Spoon the caramel mixture on top of each muffin cup carefully.
Bake pan in oven for about 10-12 minutes, or until cooked through and no longer
dough.
Remove pan from oven and allow to cool for at least 10 minutes.
While muffins are cooling, prepare the icing.
Beat the cream cheese and powdered sugar together until smooth.
Add in vanilla and milk and mix well.
Drizzle icing over each muffin cup and serve immediately!! Enjoy!!
