This is the best and quickest to make lemon curd I've ever tasted.
Our instructor put it on cupcakes and suggested other fruits below to
use instead of Meyer lemons.  The soup setting is high on an older
Vitamix.  Will be making this soon.  I could eat vats of it!  Lol!



Lemon curd or Other Chosen Fruit Vitamix Recipe

In less than 10 minutes, you can make delicious lemon curd.  Can
substitute blood orange, lime, grapefruit juices.


3 eggs, room temperature
1/2 cup sugar
1/3 cup freshly squeezed lemon juice (preferably Meyer lemons),
Zest of 1/2 lemon
1/2 cup cubed butter, cool

Start on hot soup setting.  After four minutes, with the motor
running, open knob on lid and add cubed butter, one cube at a time.
Wait until each cube is fully incorporated before adding the next.
Continue to cook for one minute on hot soup setting.
If it has not reached desired thickness, continue cooking for one minute more.
Finish with lemon zest, and pulse to mix into the curd.

Pour intoa serving bowl.
Chill for at least 30 minutes before serving.
