Greek Almond Biscuits _____ 3 cups almond meal 3 egg whites 1 cup castor sugar 1 cup flaked almonds 3 drops almond essence Heat oven to 180, line a tray with baking paper. Place egg whites in a bowl and lightly beat, stir in sugar, almond meal and almond essence. Mix together well, mixture should be slightly sticky. Take one tablespoon at a time of the mixture, roll into little logs, repeat with all the mixture. Spread flaked almonds on a large plate, roll each biscuit into the almonds, pressing any leftover nuts onto biscuits. Place logs on lined baking tray and cook for 15 - 18 minutes.
