Hello Sharon, as I very much winged this recipe, and so accuracy is probably
not the best, but basically all I did was to make only half the quantity of
the recipe, replacing the all purpose flour with almond meal, ¾ cup, and one
quarter of a cup of gf flour. The icing was simply melted chocolate, dark
version, dark used in both icing and also in the cake.  I’d hate anyone to
follow my rusty measurements and have a failed cake as there are a lot of
good ingredients that should not be spoilt by a wrong recipe. If you can
wait till I try the recipe again, I’d happily share exactly what I did, but
if you wanted to try the almond and gf flour replacement, that is what I did
and I only made half Susan’s recipe quantity, seeing as I was testing, with
fingers crossed!

Valerie, can you explain step by step how you made these gluten free?

How much of what for the cake and the frosting etc? I’m not very experienced
in the changeover, and would like to try these, but hesitated because of the
gluten.

Could you write out a gluten free version?

My friends and I would be forever grateful.

Hello Susan, I just wanted to say I made the Cappuccino Squares yesterday.
Half the quantity is in the freezer and the other is out and frosted for
sharing. These are so delicious. I am not quite sure how the usual recipe
would be texture wize, as I changed it to make it gluten free. I used almond
meal and a little gf flour in place of all purpose and because I’d forgotten
to buy icing sugar, I made a choc ganache icing. The squares are very
tempting and suspect some are sneaked out of the fridge now and then. 

 

Thanks so much for sharing this lovely recipe, I was brave enough to alter
it and try it with almond meal, though a bit worried how it might turn out,
but it’s a winner. Oh, I also put chopped macadamias on the bottom of the
pans before putting in the batter, just happened to have a small amount left
from another recipe.

 

Next time around I’ll make the squares the normal way, but this is very
good;  I’d like to compare the two ways of making them though.
