Hi Valerie, and good to see you again.
I think the bread pan you are thinking of is called a Pullman loaf pan. There are two different sizes, one that is about 13 inches long, and another that I think is 9 inches long. These pans are unique because they're designed to bake bread with a lid that slides into place over the top. This results in a loaf of bread that is perfectly flat on all sides, has a very thin crust, and a compact, dense crumb. This loaf is ideal for making tea sandwiches or other sandwiches that may be cut into various shapes, especially canapes or open-faced sandwiches. I don't have a clue if they sell them in Australia, so my guess is that you'd likely have to order online. I have two of these pans that are of the longer model. The bread is baked with the lid on, but the lid is removed for about the last 10 minutes or so to let out steam and to brown the top a little.
