When it comes to baking cakes, the primary building blocks are the flour, eggs, liquids, fats, and sugar. How you choose to flavor the cake is entirely up to you. If you don't want or can't have the almond extract, just leave it out or use more vanilla or whatever other flavoring you'd like. It won't matter as to the structure or texture of the finished cake. Little Heather and I just got done mixing up a batch of dough to turn into hamburger buns. I will need them in a couple days when I make barbecue chicken filling for sandwiches in the slow cooker. I'll probably make a potato salad and some fresh fruit to go on the side, and of course, chips. Yum! So in addition to the difficult night, I had to take both kids to the doctor for checkups this morning, and poor little Naomi had to have three shots. Her cries about broke my heart. I don't know just how I have made it through my day so well without a nap, but it has been a good day and both kids have either slept a lot or behaved very well. Yay! Any time one of you wants to watch Naomi while Heather and I nap, you're more than welcome. It would be a better gift than cash any day.

Jon and Christina,
I think you have built-in babysitters on the list where Penny and I
are concerned.

If Christina hadn't asked about how to make the chicken, I would've.
It sounds yummy, and well worth the challenge it would give me.

David is allergic to nuts, so is there something I can substitute in
the pound cake for the almond extract? Cake sounds like a nice thing
to have around.

Penny, aww, thank you. Kisses bestowed. *smile* Yes, they are a joy. I
have one of each--Luke and Sharon. Now juggling the phone and the two
of them to get a picture would indeed be a challenge! *laugh* I'd
probably just drop the phone on someone's head; can't have that!

Okay, so as to keep this somewhat on topic, for a little treat, I made
this pound cake last week, and it all disappeared the same day!

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 sticks *1 cup* unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 teaspoon vanilla
1/2 teaspoon almond extract
4 large eggs, room temperature

Whisk eggs, set aside.
In medium bowl, cream together butter and sugar. Add vanilla and
almond extracts. Add in the beaten eggs, a little at a time, mix after
each addition.
In a medium bowl, whisk together the flour, baking powder, and salt.
Add flour mixture to butter mixture, and mix just until flour is
incorporated.

Grease and flour a 9x5 loaf pan.
Bake at 375 degrees for 40 minutes.
