It sounds like the auto complete in your email program isn't working properly.
I had issues with that on and off for a long time and still do, occasionally.
My solution is to have a word document with all the important email addresses
on it so that if the auto complete doesn't work, I find the email address in
the word document, copy it, and paste it into the to field in the email I want
to send. In that word document, I have the person's name on one line, and the
email address on the line beneath it. So When I want to search for an email, I
search for the person's name and then arrow down to the email address. Perhaps
that system will help.
Being without the internet here is really an issue. I depend on it for just
about all of my contact with the outside world except for the phone. I have
never given in, as everyone else here has, to getting phone service through my
cable company. It's so much less expensive that way. But when the cable goes
out, your phone is gone too. Melanie depends on her smart phone which isn't
smart without the internet. Also, she's been working from home because of Covid
19. And I'm very dependent on her right now because the home health aide who
usually comes for a few hours on weekdays, went out of state on vacation for a
week, and I told her that she would need to stay away for 14 days after her
return to try to ensure that if she caught the virus, she'll know within 14
days. I now have to figure out where she can get tested and how to get her to
have a test, and hope that it's accurate. So, I'm so grateful that the
internet came to life this morning at around 9:30 a.m.

I thought I'd sent out several messages, but happened to check to see if I'd
entered the right address on an email, and discovered that the process of
entering only part of an address, and having the entire address appear, no
longer worked. Since I have over 800 names in my Contact file, having to
search for each address makes me feel like shutting down my computer and
getting some long overdue work around the house taken care of.
I've tried everything including contacting the google help center.
They gave me a huge number of suggestions, and people who had the same problem,
but most of it was not helpful, and the rest did not work on my ancient machine.
