Most books that would have to be distroyed to be scanned because the text is really far in the binding won't come out good enough to bother with anyway. When you first get the book go through it turning a very small number of pages at a time. Run your hand down the center of the open book gently convincing it to open all the way. If you do this all the way from the front of the book to the back and then from back to front, the book should open enough for scanning pretty easily. It has the added benefit of making the books ware look identical to the type of ware that you would see in an often read book instead of an abused scanned book.
