Hi Rachel,
The Hebrew letters won't survive the conversion to braille, I don't know
about daisy. If the Hebrew letters or words are just sprinkled throughout
the book you could leave them out and have a note to that effect in the long
synopsis field, and/or as a note within the book itself. That's what another
volunteer did with a book that had occasional Chinese words. Fortunately in
that case the Chinese words appeared in Chinese characters and then
transliterated with English letters, and then translated to English, and
since the Chinese characters didn't scan correctly anyway there was no great
loss in leaving them out.
