Hi Valerie and everyone!

Whenever I have scanned and cleaned up a cookbook, I always make sure the ingredients are in the order they are in the hard copy of the book, because I know it can be confusing if the ingredients are out of order, and it would bug me if I knew they were not in order.

The only comment I would make as a sighted volunteer is to make sure that
the ingredient list is in the order they are used, or it can be confusing
for someone with dyslexia and perceptual disorders. Even when there are
columns, typically they are listed line by line, so if you simply separated
the columns and pasted column 2 after column 1, the ingredients would be out
of order in my experience.

Jamie can correct me if I am wrong, but otherwise I see no problem in making
things a single column. Confirming the order of usage, would be my greatest
concern.

HTH!
Valerie
