When I've proofed cookbooks or cookbook pages that had problems I do put the ingredients in a single column, i.e., a list. I think even for sighted people it's easier to read, though when I type out recipes to send to my daughters I do sometimes put some of them, like the dry ingredients on one line, just because otherwise I don't have room on the page.
