I agree, Jamei, and I find it fascinating to learn about these things. I must add, though, it's necessary to pay attention, whether one is sighted or not. My husband, a supposedly intelligent man (phd) has burnt the bottom out of at least two saucepans when steaming veggies because he's been distracted (not that I was any help, not notcing what he was doing until I smelled that horrid burnt veggie-pan smell. I haven't made candy in over 10 years but I remember impatiently waiting for the thermometer to rise to the correct temperature.
