Yeah, and if you want to make caramel that's up to dg320 or so. I think
there is a way to tell if water is boiling if you listen. The problem is
what I may think is boiling might be simmering. There is a metal disk you
can get and you put it in a pot of water and it will make a racket when the water is boiling. Problem is, what if you have more pots on the stove where

One of my biggest pet peeves is that, while there are talking thermometers,
most do not go high enough for several types of candy.
They're fine for things like fudge. As I recall, most of them only go up to
around 242 or 250.

in over 10 years but I remember impatiently waiting for the
thermometer to rise to the correct temperature.
