It says it's bilingual, so I think you can do it.  You can tell from the title:

"The empanadas that abuela made = Las empanadas que hacía la abuela "

Does OmniPage have a setting for languages? OpenBook has a combo box for primary and secondary language. If I were to scan that book and didn't set the secondary language to Spanish, I would have ¡ as ! and é as a 6.

I know because I've been there done that when there was some Spanish in a book many years ago.
