In Kurzweil's recognition settings, there's a long list of languages that gives it the ability to recognize various accent marks. If the book you're scanning is entirely written in French, just deselect English and select French. If it's in English and French, you can select both languages. once you've told it to recognize French characters, it should start showing you the accents.
