I do both. I proof as I scan and proof read books.

Only proofing to a point. I want to make sure that for the most part, all
the proofers have to do is change the font style and size, maybe fix a
spelling problem I didn't know about and then send it back up.

Actually, it sounds like you are proofing, at least, you are proofing your
own work. When I said I scan at about the same rate, actually more like ten
to twelve pages an hour, I scan two pages at a time and proof those two
pages before going on to the next two. This depends a lot on the book
though. Some books give poorer quality scans and that proofing is a lot
harder. Some books just have more wordage on a page than others. Considering

that you are having to deal with dialect you may be working considerably
faster than I do.

I would have to time myself again, but I am making sure everything is just
right... i.e. as close to publisher quality as I can get it. I don't proof
though.

That's a hard  question to answer. It depends on the speed and memory of
your computer, the scanner and the software. I scanned about 100 pages in an
hour yesterday. I am using an Epson 3490 scanner and OmniPage Pro 17.

Was just wondering so I knew how to manage library checkouts, how long on
average does it take to scan a 335 or so page book? I am running at about 13
pages an hour over here.
