Actually, it sounds like you are proofing, at least, you are proofing your own work. When I said I scan at about the same rate, actually more like ten to twelve pages an hour, I scan two pages at a time and proof those two pages before going on to the next two. This depends a lot on the book though. Some books give poorer quality scans and that proofing is a lot harder. Some books just have more wordage on a page than others. That's a hard question to answer. It depends on the speed and memory of your computer, the scanner and the software. I scanned about 100 pages in an hour yesterday.
