To help with your question I think we'll have to know what software you are using. You say you are scanning a book, but I am wondering if that was a mistake. :-) If you are really getting more page breaks than really belong when scanning you might have a settings problem. Maybe the program turned section or some other kind of breaking character in to page breaks, but I don't know exactly what to do about it, and the solution is probably different for each program used.
