If you are on the checkout list look above that list to the links at the top of the page. There is a link labeled "my scans in process." Click that and you will see a list of your submissions being proofread. Click on the history of that book, also located on that list, and you will find links to email the proofreader.

Is there a way for a submitter to know who has their book?  Once it's
taken, the book isn't on the checkout list, so is there some other way to
get to the history section, and thus the name and email of the proofer?
