This may seem bleeding obvious, but what are the rules, guidelines, whatever
ofr using 'a' and 'the' and not using them at all?

I am working with a lady from a non-English speaking background who has
excellent English except for a few little things, like when to use 'a' and
'the' and when to omit them altogether.

... when is it a rule, when do I refer to the rule, or are rules ...

... when do I speak of a danger, or just danger, and when does it become the
danger?

Is there a reference book that explains this aspect of English grammar?
