if I wish. I simply pan hard right and record. Not that there seems much
point in doing so - may as well record into a mono track. Have I missed

He's certainly right on the recording side of things.
Most times, you can either record left/mono or left+right/stereo.
Notice that it is not possible to record only the right side, i.e.
channel 2.
Likewise with the few devices that allow more than two channels. The first one
(left) is always given and you can only increase the number of channels but not
pick one at random.
As for editing, it is multi track but single time range, that is,
non-contiguous or multiple selections (time-wise) are not possible.
Mind, that's not necessarily a disadvantage, especially for us.

There seemed to be two contexts in which he was suggesting Audacity
can only deal with single tracks.
The first was editing, and that's clearly incorrect.
The second, was recording multiple channels into separate tracks, for
example when recording from two microphones. This isn't an area
which I'm familiar with, but from what I've read, at least some
mixers seem work with audacity and enable this to happen.
