Thank you for the clarifications, I believe I am aware of these techniques, but
I was just inquiring if there is a direct way to place the cursor in the middle
of a track and start recording, and have the recorded audio inserted at the
cursor position without overwriting the rest of the audio. It turns out that
this feature is not currently implemented in Audacity, but I wander if this is
intentional to overlook this feature because the developers see that it is not
important for a multitrack audio editor?

If you want to 'replace' part of the first track, you can use "Split Delete" to
remove that part that you want to replace, then record on the second track to
fill the gap.
If you want to "insert" new audio, then you need to insert some silence into
the first track at the point where you wish to insert the new audio. There are
two ways that you can insert a gap into the first
track:
1) You can place the cursor at the relevant point and then generate some
silence (from the "Generate" menu).
2) You can place the cursor at the relevant point and then select to the end of
the track (Shift + End), Cut the selected portion (Ctrl + X), move the cursor
to the end of the desired gap, and paste (Ctr + V).
After making the gap, record the new part on the second track.
A variation on this second method is to cut the part that you want to be after
the new material, then record the new material with "Append Record", then paste
the audio that you cut on the end of the new recording.

Rather than recording into the middle of an existing track, create a
new audio track, set the cursor position to where you want recording
to start and record into the new track using "Append Record". On
Export, all tracks are mixed down into a single audio file,
