For the first track, simply hit the 'r' key, which will start Audacity recording. For each additional track after that, open the track menu alt+t in Audacity 1.3 and again press 'r' to record. To stop the recording process for each track, hit the space bar. To mix the tracks you have recorded, track menu again and then I think it's called something like mix and render.
