Hi Adrian,
Here is another way to pan.
I love this plugin.
Here is the link.

Hi Andrew again,
Thanks again for your prompt answer.
I found on internet the shift+alt+left/right arrow mentioned but apparently
doesn't work for me. I will try the first suggestion.
Best Wishes,

Hi Adrian
Shift+p opens the pan dialog. You can enter any value between minus 1 (-1)
and 1. For example, -0.3 will pan about 30% to the left. As Robert
mentioned a while ago, that is a fairly coarse scale, but you do not have to
go hard left or hard right.
Another option is to use shift8+alt+left or right arrow to pan left or right
respectively. You can make that adjustment while playing, which allows you
to hear the shift in real time.

Subject: [audacity4blind] Custom pan
Hi,
I have two tracks and wish to put one slidely to the right and the other
one slidelly to the left.
Under tracks sub menu is a pan sub menu but have only 3 options centre,
left and right.
The problem is left and right have max value. It is max right and max left
which I don't like it.
It is any short key to adjust let's say 30% on left and same right?
Thanks in advance for your answer.
