Below are some tips collected by me from this mailling list and some other website to record into the middle of track. Hope that can help you
Cuong

Tip 1:
1. Make sure the track you want to append record is selected, and move cursor to the position where you want to append record.
2. Select from that position to the end of current track.
3. Split this to a new clip by pressing Ctrl+Alt+I, or go to menu edit->clip boundaries->split new. 3. (Optional) Move to the track you've just splitted, and press Shift+u to mute it. 4. Move back to the track you want to append record, then press shift+r to continue recording.
5. Move cursor to the end of the track you appended record.
6. Deselect this track, then move to the splitted track then align it with cursor 7. (Optional) Select both of these tracks, then go to menu track, choose mix and render to join it into one track.
Tip 2:
1. Move cursor to the position where you want to append record.
2. (Optional) mute the original recorded track
3. Press R to record into a new track.
4. Select the new recorded audio, then cut or copy to clipboard
5. If you want to slide recording, just move cursor to the position where you want in the ooriginal track, then paste the new recorded. If there are mistakes you want to correct, select it and paste your newly recorded audio. Remember to delete the unused track you recorded and cut.
Tip 3 given by David Bailes from audacity4blind mailing list
Assuming that the track you're interested in is selected, and others are not selected.
1. move the cursor to where you want to insert some recording.
2. press shift+k to select to the end of the track, and ctrl+x to cut it.
3. press shift+r to append record, and spacebar to stop.
4. press k to move to the end of the track, and ctrl+v to paste.
