Yes, it should work if you take the AUX out (or whatever it is called
on your keyboard) and plug it into the Behringer.
Of course, the Behringer line-in has to be selected in Audacity as
well (Shift+I).

- By making them yourself
- by importing samples
- by playing a "snapper/clapper" instrument.

I assume you go for the first method.
Then, just go ahead and record them.
(Shift+R would record to a new track)
After that, it needs some post-processing.
- normalize
- Gate (removing noise between sounds)
- compression
After that, it might need some editing, e.g. move single claps around.
